The Gerbeaud Cake was created by our former head confectioner, Sándor Kovács, in honor of the confectionery’s 145th anniversary. The Gerbeaud Cake is a chocolate butter sponge cake flavored with apricot palinka and candied apricots, layered with Valrhona chocolate cream, and covered with a frosting of Valrhona Manjari 64% chocolate. Even at room temperature, the cake will keep for more than three weeks.
